Nibiru - Blanc de Blanc Brut Nature 2016
We are obviously biased but this is one of the best sparkling wines we have had in a long, long time. 50% Chardonnay + 50% Pinot Blanc from very rocky soils in Austria's Kamptal region. The wine is aged in barrel for one year before being re-fermented in bottle and aged on its lees (yeasts) for two years prior to disgorging (removing the dead yeasts and sediment as per the Champagne method). It is opulent but tense, rich but so fresh, complex and intellectual yet so easy to drink. Perfect for special occasions or not, this is serious wine that is immediate and immensely satisfying.
