Fattoria di Sammontana - Primo Fuoco TRIO
Made by Daniele & Dario, the fourth generation at this biodynamic Tuscan estate. Within the range they make a balanced mix of traditional Sangioveses along with these experimental wines vinified in clay amphoras (see the orange wine section as well).
A wonderful, complex rosé made from the Merlot grape. The grapes are pressed as soon as they arrive at the winery, and the juice is transferred to a clay amphora where it ferments and then ages for 8 months. The result is a wonderfully tense and mineral, almost salty rosé. Initially shy on the nose, it then opens up into a proper elegant wine. It also has a pretty incredible bright and deep pink colour.
BIANCO (orange) 2019
A very small production wine made from Trebbiano Toscano. The wine spent three months on its skins (!) and a further 6 months in local clay amphoras. This one is structured and firm, but with a salty complexity and savoury character that will work wonders with most white meats, chunky white fish, or any bold flavours in food. Serious stuff.
A unique and sublime Cabernet Sauvignon vinified and aged in clay amphoras. Unoaked, very pure, savoury, with very fine subtle tannins, a medium body, and a real elegance. Will benefit from some air to really open up, and it will reveal layers of red & dark fruits surrounded by a subtle earthiness and persistent finish.
